Healthy snacks and recepies with chocolate, fruits and nuts!

Easy Chocolate Cake


1 cup cornwheat or buckwheat (half of each)
1 teaspoons baking powder
0.5 dl raw cocoa
3 eggs
2 cup raw sugar, choped figs/apricots or mashed banana
250 g cream cheese


50 g chopped walnuts and hasselnuts
Grated rind of orange


Topping:

Whole hasselnuts and walnuts
100 g 85-percent dark chocolate


Mix wheat, raw cacao and baking powder. Whip the eggs together with sugar or fruits until you have smooth creme. Turn down the flour into the mixture together with the creme cheese. Chopp the nuts and stir down together with grated rind of orange. Melt dark chocolate at the stove in a water bath. Decorate with hasselnuts and walnuts. Bake in middle of oven for about 175 degrees, 25 minutes. Serve together with swedish handcrafted blueberries.

Banana and coconut medals

1 cup finely chopped dates
1 cup chopped figs
1 mashed banana
One cup coconut flakes
100 grams of unsweetened dark chocolate
Hasselnuts, walnuts or almonds for topping


Melt the chocolate in a water bath and add all ingredients. Mash well into a batter and wait until the chocolate started to solidify to form into balls or medals. Roll the balls nicely and decorate with a hazelnut, walnut or almond on top. Allow to dry on parchment paper.


Chocolate Mousse


100 grams dark chocolate 70%,  for exampel vahlrona
2 ½ tablespoons raw cocoa
2 egg whites (no yolks)
4 tbsp water
2 tablespoons mashed banana


Stir together raw cocoa and water. Melt the chocolate in a water bath. Stir together the cocoawater and the melted chocolate. Whisk egg white until it feels hard in consistency and stir in your chocolate mixture. Set in the fridge or freezer for a couple of hours. Served with strawberries, cranberries, blueberries, raspberries or a whole fruit sallad.


Chocolade balls and chocolate dipped nuts


1 package Physsalis or a bag of hazelnuts
1 package of cashewnuts
1 package of almonds
150 grams of unsweetened dark chocolate
2 bananas
100 gram steawberries
1 cup of soja icecremé


Melt the chokolade in a water bath. Dipp nuts and physsalis in the chocolate and allow to dry on parchment paper. Cutt a slit in the banana and fill it with whole chocolate pieces. Preheat the oven light in about 10 minutes or until the chocolate has melted. Serve together with chopped strawberries and a cup of sojabased icecremé..
